Why we love it: It's high in protein (all 9 amino acids included) and gluten-free (technically, a seed) with a massive amount of antioxidants and heart-healthy fats. The superfood is also rich in zinc, calcium, and potassium and boasts an impressive level of biodiversity. How to eat it: Boiled (like rice). There are many a Pinterest recipe suggesting a variety of preparations including breakfast cereal, pudding, and pancakes. We prefer it tossed into a salad, like the mango-blueberry recipe pictured.
