Make your own Adobo Fish Tacos
Make a whole East End day of it by recreating Gurney's Adobo Fish Tacos! Executive chef Dane Sayles shares the recipe:
Ingredients:
4 pounds of white flaky fish cut into 4-ounce pieces , such as fluke, flounder etc.
1 ½ cup Adobo Sauce
16 Blue Corn or Regular Corn Tortilla
Kosher Salt
Procedure:
In a medium shallow bowl combine white fish, adobo sauce. cover and marinate for 15-20 minutes.
In a large nonstick skillet over medium high heat, heat vegetable oil. Remove fish from marinate and season with salt on both sides.
Cook 3 to 5 minutes per side, until cook through.
In a medium nonstick skillet or griddle over medium heat. Brush with canola oil or vegetable oil and warm tortilla 2 minutes per side.
Assemble tacos: serve 4-ounce fish over warm tacos with drizzle of chipotle mayo, pickled red onion, cilantro leaves and lime wedges on the side.
