Eating at Roman's is like playing a good, win-win version of Russian Roulette - you never know what you're going to get but you know it's going to be super delicious. Opened in 2009 by the same pioneers of the hipster culinary revolution who own Diner and Marlow & Sons in Williamsburg, the menu here changes daily and is determined by a conference amongst the chef and line cooks. The results are artfully composed dishes inspired by fresh and local ingredients that are often surprisingly spectacular in their simplicity. And the beauty of it all is you could come here every night and never eat the same dish twice! Like the saying goes, variety is the spice of life.
