Chef/Owner Kevin Adey of the environmentally conscious Faro offers 8 different pasta dishes prepared with grains milled in house for max freshness. The new fall pasta selection includes the scroll-shaped Rye Spaccatelli with braised beef, caramelized onions and parmesan; Rigatoni Mezzi with braised goat butchered in house, kale, pistachios and housemade ricotta infused with orange zest; and Pasta e Fagioli with creamy cranberry beans, tiny ditalini pasta, pancetta, Parmesan and fresh herbs in a chicken stock-based sauce. And if that isn't enough to get your mouth watering, Kevin’s housemade gluten-free Casarecce pasta can be substituted for any of the wheat choices on Faro’s dinner menu.
