By now, it has pretty much been established that if you want to eat at any of April Bloomfield's places, you are almost definitely going to have to wait. And if you want to eat at The Spotted Pig, you will probably have to fight through the mobs of people who descend nightly upon this West Village gastro-pub just to get your foot in the door. But those who persevere and survive this grueling experience are rewarded with Bloomfield's extraordinary and unbelievably satisfying cooking. The house made gnudi, rich and luscious with sheep's milk ricotta, brown butter, parmesan and sage, is enough to make us forget about our tired feet, enveloping us in a blanket of warmth and contentment.
