Named after the infamous district in Paris where the Moulin Rouge still glitters and artists from Dalí to Picasso once roamed, this recently-opened Chelsea bistro is the place for modern, French-American cuisine. A collaboration between restaurateur Gabriel Stulman and former Momofuku chef Tien Ho, Montmartre's one-page menu is anything but modest. Wash down one of the Petites Assiettes—such as miso soup and chicken liver—with a Paris Campari & Soda or split Saturday's Plat Du Jour, a grilled whole Turbot, with a very hungry date.
