Buttermilk fried chicken, truffle mac 'n' cheese, crab cakes, and steak frites? It may not sound like the typical lineup for those who have gone meat-and-dairy-free, but at this new eatery, vegan indulgence is the name of the game. And menu!
Willow, the new bistro from acclaimed chef Guy Vaknin and his wife Tali, the masterminds behind plant-based favorite, Beyond Sushi, has made its debut in Chelsea this week and we're already drooling.
Utilizing freshly-sourced ingredients like grains and veggies, along with the best plant-based products on the market, including Impossible™ meat and Blackbird seitan, Chef Vaknin has given classic comfort dishes an elevated, vegan twist. So much so that even certified carnivores are sure to enjoy the extensive offerings. And yep, there's even dessert: Vanilla Bean Cashew Cheesecake, anyone?
The restaurant is currently serving takeout and delivery, and has plans for outdoor dining this spring. As for the interiors? Well, once we can finally enjoy the inside of places again, expect a chic, warm space filled with rich royal blue, marble tables, and accents of gold and bronze. Our Instagram feeds can hardly wait, but luckily, our taste buds don't have to.
