Thanks to Anthony Bourdain’s No Reservations, Bo Innovation has become one of the most famous restaurants in Hong Kong. Run by the ‘Demon Chef’ (birth name: Alvin Leung, Jr.), his self-proclaimed ‘X-treme Chinese Cuisine’ takes your palette on a ride with molecular takes on traditional Chinese food, such as the xiao long bao. The restaurant itself is full of life and has a fantastic atmosphere. Diners can directly mingle with the chef, making this dining experience very interactive and frankly, slightly intimidating when you are put on the spot by the Chef! It is clear once you are there that Bo Innovation is an extension of Alvin’s personality—and while a few may find it slightly too rock and roll—no one can refute that this is one of those experiences that you just have to have if you’re a serious foodie in Hong Kong.
