Caro, we love what you've done to the dessert menu at the Crow's Nest. Why did you begin baking? What do you love most about coming up with new dessert recipes? Can you share a recipe for one of your favorite summer desserts?
Thank you. I always loved baking. After finishing culinary school in 2007, I thought that I wanted to be a cook. After working at a big catering company as a pastry chef and after my first season in la Huella with Florencia Courreges (the executive pastry chef) I knew that it was what I really wanted to do. I like spoiling people with sweet treats, they enjoy it so much that they look like little kids!
What I like most about coming up with new recipes is that it gives me that feeling of constant creativity. I also love that I learn something new everyday. My Favorite dessert at the Crow's Nest right now is also the most popular: Summer Cake!
