Dark Chocolate Fondant Puddings with Rum Raisins
Ingredients
1/2 cup raisins, chopped
2 tablespoons rum
150g CADBURY Dark Chocolate Melts
150g butter, chopped
3 eggs
1/4 cup caster sugar
1/4 cup flour
Instructions:
Combine the raisins and rum in a microwave-proof bowl and cook on 50% power for 2 minutes. Melt the dark chocolate and butter in a bowl over simmering water, stirring occasionally until smooth. Remove from the heat, cool slightly. Beat the eggs and sugar together with an electric mixer until light and fluffy. Fold in the chocolate mixture, then the sifted flour and finally, the raisins and rum. Spoon the mixture into 6 greased and cocoa dusted 1/2 cup ramekins. Place on a tray and bake in a hot oven 400° for 15 minutes or until cooked as desired. Turn out onto serving plates and serve immediately with a dollop of pure cream
