Churros with Chocolate Rum Sauce
Ingredients:
250ml milk
100g unsalted butter, cubed
zest of 1 lemon
1 tablespoon caster sugar
125g flour
2 eggs
Vegetable oil for deep frying
100g caster sugar
1/2 teaspoon ground cinnamon
Instructions:
In a medium saucepan, bring the milk, butter and lemon zest to a boil. Pour in sugar and flour and stir over a low heat until the mixture comes together. Place in a bowl and allow to cool a little (about 5 minutes). Add one egg at a time stirring with a wooden spoon after each addition, mixing together until it is smooth and emulsified. Heat the oil in a medium saucepan to 320°. Place the churros mixture in a piping bag with a large star nozzle. Then, frying in batches, pipe 10 cm length individual churros into hot oil cutting each length with a small knife. Fry for about 5 minutes or until golden and cooked. Remove with a slotted spoon and drain on paper towel. Mix the sugar and cinnamon together and toss the churros in the mixture.

Ingredients
200ml thickened cream
100g dark chocolate finely chopped
1 tablespoon rum
Instructions
In a small saucepan, bring the cream and rum to a boil. Pour in chocolate, whisk and serve with the churros.
