Tropical Grilled Skewers
These skewers work with any meat of your choice, but to stick with your tropical theme, we suggest going for scallop, shrimp, or salmon. Cut the meat into approximately 1-inch pieces and stick them through the skewers. For more tropical fun, pair the meat with a piece of fruit, like pineapple or mango. Serve with cilantro sauce or spicy mayo sauce. To really wow your guests, cut the top off of a pineapple and use it as your serving station.
Ingredients:
1-2 pounds of meat of your choice, cut into 1 inch pieces
kosher salt and black pepper
1/4 cup olive oil
1/4 cup chopped cilantro
2 teaspoons grated lemon zest
sliced tropical fruit, cut into 1 inch pieces
sauce of your choice
