Orzo Salad with Scallions, Hazelnuts, and Golden Raisins
A make-ahead masterpiece if we’ve ever seen one! You can mix the dressing, plump the raisins, and toast the hazelnuts the night before.
Ingredients:
1/2 cup hazelnuts
1/2 cup red wine vinegar
1/2 cup golden raisins
1 cup orzo
1 lime, juiced
2 tablespoons rice wine vinegar
2 tablespoons champagne vinegar
Kosher salt
1/4 cup sesame oil
2 tablespoons good olive oil, plus more for coating the orzo
6 scallions
Small handful of chives
1/4 teaspoon red pepper flakes
2 ounces fresh goat cheese
1/4 teaspoon flaky sea salt
