Oatmeal-Pumpkin-Banana-Peanut Butter Bars
We fell in love with these healthy treats just by looking at the name! They're even better than they look and will satisfy your peanut butter craving in an instant. These bars are literally the perfect snack for when you're on the go.
Ingredients
1 Cup GF Oats
1 1/2 Cup GF Oats, ground into oat flour
1/2 Cup chia seeds
1 tsp baking powder
1 tsp each: pumpkin pie spice, ginger, nutmeg, cinnamon
1 tsp coarse sea salt
2 Overripe bananas
1/2 cup peanut butter (you can use almond butter or tahini if you prefer)
2 egg whites
1/4 cup almond milk
3/4 cup organic pumpkin puree
3 tbs melted coconut oil.
