Apple, Apricot and Walnut Compote
This sugar-free, fat-free, gluten free recipe is a perfect accompaniment to yogurt, granola,and roast dinner, or is great straight out of the jar. All the sweetness comes from the fresh apples and naturally dried apricots sprinkled with cinnamon. Refrigerate and enjoy it however you please!
Ingredients
2 lbs apples (any variety will do)
3/4 lb dried natural unsweetened apricots
1 cup water
1 tsp ground cardamom
1 1/2 tsp ground cinnamon
2 tbsp lemon juice
1/2 walnuts toasted
