Cinnamon Apple Stuffed Sweet Potatoes
This combination of fall foods is the ideal breakfast /snack/dinner/lunch/dessert! All the ingredients are super healthy and the combination is unique and tasty. Having these sweet potatoes at any meal will quickly become addicting and that's why this seasonal meal is one of our favorites.
Ingredients
2 sweet potatoes, washed and pierced with a knife
1 large honeycrisp or fuji apple, diced
1 tsp coconut oil
½ tsp cinnamon
¼ cup pecans, roughly chopped
