Zucchini, Ricotta, & Paprika Stuffed Squash Blossoms
These little blossoms are stuffed with zucchini, ricotta, garlic, oregano, and a dash of paprika for a subtle kick. The outside is crispy, while the inside is warm and gooey (our mouths are watering just writing this). And to top it off, a squash blossom is an actual flower. When's the last time you can say you ate petals and they tasted AMAZING?
Ingredients
1 medium zucchini, peeled and grated
1 and 1/2 cups ricotta cheese
2 eggs
3 cloves garlic, minced
1/2 teaspoon McCormick Gourmet Mediterranean Oregano
1/2 teaspoon McCormick Gourmet Hot Hungarian Paprika
3/4 teaspoon black pepper
3/4 teaspoon salt
3/4 cup flour
vegetable oil
12 large squash blossoms
