Benton's Old Fashioned at PDT
It turns out that bacon fat and Bourbon make a great pair. At PDT (Please Don't Tell), bacon fat rendered from a few slices is mixed with Bourbon in a sauce pan, where it sits covered for four hours. After a couple more hours in a freezer, the solid fat is removed, the liquid strained, and everything is put back into the bottle.
To make their Benton's Old Fashioned, PDT adds a little bit of maple syrup with bitters and an orange twist for garnishing, served in a stem glass. What you get is a truly unique cocktail that will definitely warm you up.
