Forget over-crowded, overrated, hole-in-the-wall cocktail bars. Finally, we have a secret spot worth searching for - and it's all about champagne and caviar.

Next week, gourmet caviar shop Marky's on Madison will unveil their new fine-casual caviar cafe, HŪSO. Hidden behind luxe velvet curtains in the rear of the retail space, the intimate, 12-seat space boasts chic banquettes, pearl-blue hues, brass accents, and Calacatta quartz marble tabletops.

Helmed by Eleven Madison alum Executive Chef Buddha Lo, the eatery offers the world's first “farm-to-spoon” caviar concept, serving the freshest caviar within days of harvest, delivered directly from its own U.S. aquafarm.

During the day, an à la carte menu will highlight bites at more affordable price points, including dishes such as the HŪSO Dog, an upscale version of the summertime snack featuring an Alaskan King crab "hot dog" in a brioche bun, topped with avocado, pickled mustard aioli and Golden Ossetra. At night, the destination becomes a curtained-off speakeasy-style experience, serving up a 7-course tasting menu ($200 per person) with chef selections including a juicy cut of Wagyu served alongside black truffle and Marky’s Beluga di Venezia Caviar.

As for the drinks? Nothing but the best bubbly, of course: Dom Perignon, Veuve Clicquot, Krug, Crystal, Laurent Perrier. We'd take those over a mixology experiment any day.
