Keep things festive with the spirit of surprise seeing as the menu's dishes are not pre-announced. While this secrecy is said to be due to Chef Bouley's "right to inspire and delight in sourcing the freshest to-the-moment ingredients," we can't help but entertain the possibility of him exercising his equal right to culinary procrastination, no? Last years Easter menu saw a fourth course option of rabbit, spring lamb, or duckling, finished off with a bowl of Huckleberry Soup and a spring inspired Mandarin, Clementine and Tangerine Warm Tarte.
