The Marrow, is nothing like its two predecessors which both feature Asian ingredients. Instead it focuses on a revitalized Eurocentric menu which borrows from both Italian and German influences---the latter; a nod to Dieterle’s German heritage. The Marrow serves up pickled herring salad with baby beets, cream, pistachio and horseradish cream and other dishes such as vitello tomato made with tuna belly, stone bass, and sweatbreads.
