Drinking & Dining: Vollmers

A recent 8-course tasting menu at this pristine 2-star Michelin restaurant bore dishes dressed in such titular titles as “2011 Retrospect” (mussel, cod and elderflower), “Poor Man’s Asparagus” (salsify, buttermilk, and cress), and “Childhood Memories” (pointed cabbage, pork and sherry). Each deconstructed offering lists the distance traveled to source, an amusement to consider as chef brothers Mats and Ebbe Vollmer’s Childhood Memories were conjured merely 167 km from Malmö.
