The Care Bear Stare

"The Care Bear Stare is a playful riff on a classic low-ABV cobbler made with Aperol, East India Solera Sherry, Lime, Cinnamon Syrup, and “Redeemed Fruit." Our “Redeemed Fruit” is a fruity and bright cordial made from a collection of chopped ends from daily citrus garnishes and leftover pulp and citrus shells from daily juicing. All of this gets blended with a ratio of sugar, citric acid, and fruit juices that are past their prime. We’re essentially giving what would normally be discarded items a second chance to shine in a cocktail and reduce overall waste."

1 oz Aperol
1 oz East India Solera Sherry
.5 oz lime juice
.5 oz Redeemed Fruit
.25 oz cinnamon syrup*

Method: Whip all ingredients together with pebble ice, dump into glass and top with more pebble ice. Garnish with grapefruit, orange, lime slices and fresh mint sprig.

*1:1 ratio of sugar to water, crush 2 cinnamon sticks per every 250g of sugar. Let steep for 30 mins, strain.
