Beets
What: The beetroot, also known as the garden beet, red, or golden beet, refers to any cultivated variety of beets known for their edible taproots.
Why we love it: Beets are full of betalain, the antioxidant that gives the vegetable its signature violet hue, and may help ward off cancer and other degenerative diseases. Vitamin A, B, and C help bolster the immune system and increase the body's collagen production (in other words, helping your skin retain its firmness and elasticity).
