Hygge isn't the only Scandinavian concept we should embrace this winter. The Nordic Diet, developed by nutritional scientists at Denmark’s University of Copenhagen in partnership with revolutionary restaurant, Noma, promotes a 2:1 ratio of carbs to protein, while encouraging low GI (Glycemic Index) foods and more locally-sourced and seasonal fare. Think: wild meats (like Elk), more fish, and locally-grown veggies.
