Boulud plays with one signature ingredient each night, crafting an entire edible adventure from start to finish around his selection. The ambiance is as crafted as the culinary creations since its redesign by Adam Tihany in 2009. Dishes include chocolate coulant, porcini in a velouté with Cognac and braised Scottish hare leg, and Dover sole crusted with bone marrow in a sauce of red wine and green pepper.
