As an early adopter of plant-based fine-dining (way before Eleven Madison Park hopped on the bandwagon), chef and restaurateur Amanda Cohen is finally getting her official Michelin star due. Dirt Candy, which originally debuted in 2008, has been celebrated for its clever approach to vegetables, which are presented dish by dish in a tiered tasting menu.
