Grilled Zucchini with Goat Cheese and Truffle Oil
We are purveyors of goat cheese and truffle oil, both of which will entice us to more than three servings. Zucchini is low in calories, high in anti-oxidants, and helps prevent cancers. Slice the Zucchini lengthwise, making sure to keep the layers thin enough to roll. Lightly brush them with olive oil and grill until they are tender and marked on both sides. Let it cool on a plate for a few minutes and spread goat cheese on one side and roll it up. Place it back on the pan for another minute on each side or until the cheese is slightly melted. Drizzle truffle oil over the top and serve warm.
