Coconut Grilled Shrimp
Instead of grilling fatty meat, grill fish, like shrimp or tilapia. Shrimp is easier to eat, so we tend to go in that direction. Zest and juice one lime into a food processor (or if you don't have one, a blender will do) along with one garlic clove, fresh cilantro, 1/3 cup shredded coconut, 1/4 cup olive oil and 1/4 cup of soy sauce. Pour into bowl with 1-1.5 pounds of uncooked shrimp and let it marinate for a few hours. Stick them on to wooden skewers and grill for a few minutes on each side.
