The wagyu tasting is so special, I hear it calls for its own "Steak Sommeliers." What, exactly is a Steak Sommelier? What made Catch think of the idea?

The Flight of Five, offering a taste of all five Japanese Wagyu varietals, is a real experience. No one else is doing this – they can’t. Guests are tasting Japan’s top Wagyus from five different regions and prefectures. The Steak Sommelier is your Sherpa throughout the experience. They walk you through all the nuances of each varietal of Japanese Wagyu, perfectly season and cook all pieces for you tableside on a hot Japanese stone, all while educating you on what you’re tasting.

The idea for the Steak Sommelier came from myself and Culinary Director, John Beatty. We had the idea about eight months prior to opening but decided to shelf the idea. Within one week of opening, we saw that guests were ordering the Japanese Wagyu like crazy – we were selling 200-300 oz a night. After seeing the desire from the consumer, we went all in, Catch Steak style, with our Steak Sommeliers.
